Quick Dinner: Bisquick Quiches

I mentioned in my menu plan yesterday that I was relying on my old friend Bisquick® to help with dinner. If you haven’t thought of using Bisquick, you should! It’s more than just a baking mix for pancakes and biscuits.

My boys love the quiches I make for them. Seriously, love them. Hubby even freezes left-overs for his home-made microwave lunches. And I tell you, I don’t mind making them.

First, they are one dish that has most of the food groups in it. Meat, dairy, veggie.

Second, they are easy-peasy! Nine times out of ten, I have all the ingredients on hand and can throw it together in a matter of minutes.

Tip: When you have left over meats such as chicken or ham, dice them up and divide them into one-cup bags, then freeze. You’ll always have your ingredients ready for recipes such as these.

While I linked to a recipe in yesterday’s post, I wanted to share my version and alternatives that I make.

Bisquick® Ham, Spinach & Swiss Quiche

1 cup diced ham
2 cups frozen spinach, thawed and drained
1 cup shredded Swiss cheese
1 7oz can sliced mushrooms, drained
1 tbsp dried chopped onions (or 1/4 cup fresh diced onions)
1 1/2 cup milk
3/4 cup Bisquick®
3 eggs
salt & pepper to taste or celery salt

Preheat oven to 400°.
Spray 9″ pie plate with cooking spray.
Layer first 5 ingredients in pie plate. Add seasonings.
Mix together milk, Bisquick® and eggs and pour over other ingredients.
Bake for 30-40 minutes, or until center of quiche is firm.

The milk, Bisquick® and eggs are the base ingredients for any quiche I make. I just change-up the meat, veggie and cheese to make a different quiche. Sometimes I add mushrooms and onions, sometimes it’s something else. Here are a few of my variations:

  • Chicken, Broccoli, Cheddar and Diced Tomatoes
  • Shrimp, Spinach, Mozzarella and Diced Tomatoes
  • Ground Beef (browned), Bacon Bits, Cheddar and Mushrooms
  • Spinach, Feta and Tomatoes*
  • Grated Zucchini and Cheddar Jack*
  • Ground or Sliced Sausage, Peppers, Tomatoes and Parmesan

*Note: If not using a meat, increase your main veggie to 2 cups.

Clean Your Sponge – Tuesday's Tip

Yuck! Sponges are a germ heaven! They are the number 1 source of germs in the whole house.

When was the last time you cleaned your sponge? Can’t remember, can ya? It’s easy to forget. Let’s do it right now!

Spring cleanHere’s how to clean your sponge to remove germs.

  • Run it through the dish washer. Germs can’t take the heat! (Make sure it’s secure and won’t get caught on any of your machine’s parts)
  • Nuke those germs by placing your damp sponge in the microwave for 1 minute. (DO NOT microwave a dry sponge – it can burn.)

A few more tips about sponges:

  • You can always ditch your sponge and buy an antimicrobial brand if you feel you can’t keep your sponge clean
  • The cleanest kitchen are those of bachelors – because they use their sponges less and therefore spread fewer germs!
  • When finished using a sponge, squeeze it thoroughly and allow to air dry completely between uses. Bacteria will die in a dried sponge.

Menu Plan Monday – Sick Kid Edition

This is going to be quick. Little Dude is sick – nasty cough, high fever. It got so bad that we went to the ER over the weekend. It’s viral they say – which translates to we’re not sure what it is.

So we’ve spent the weekend doing the nebulizer, tubbys and lots of cuddling. Which didn’t leave me any time to coupon and grocery shop. So we’re eating what we have in the house this week.

Breakfasts: baked oatmeal, eggs, cold cereal or frozen waffles

Lunches: cold cuts, left overs, salad, tuna

Snacks: pop corn, celery & carrots with hummus, yogurt, graham crackers, apples, cheese sticks, oranges (check out this pic – LOL!)

Dinners: I’m turning to my freezer to help this week. Plus a little help from my friends Betty Crocker and Campbells!

  • Sunday: Hubby made “Meat Turtles” – cheeseburgers wrapped in bacon, then hot dogs used for the head, tail and legs. I call it MEAT OVERLOAD – but hey, Little Dude ate most of his and when he’s sick I’ll give him anything he wants! (all meats were already in our freezer)
  • Monday: Bisquick Ham, Spinach & Swiss Strata (left over ham from the freezer)
  • Toddler Tuesday: choice of chicken nuggets or fish sticks, mac & cheese and mixed veggies
  • Wednesday: Creamy Pesto Chicken and homemade bread (yep – chicken is from the freezer)
  • Thursday: breakfast for dinner or left overs (hoping for pancakes – need to restock the freezer supply!)
  • Friday: Pea Soup (from the freezer) and grilled cheese on homemade bread
  • Saturday: Slow Cooker Pot Roast (the pot roast has been in my freezer)

Quick Dinner: Banquet Family Entrees (Product Review & Giveaway)

I’ve mentioned before that I’m not opposed to serving a “meal in a box”. There are days when things just happen and keep me from my regular routine. When dinner time comes around, I’m not prepared and have to scramble. Remember – no matter how much planning you may do, “stuff” happens. So I plan for these days and always have a quick dinner on hand.

The most recent “meal in a box” we tried came from the freezer – Banquet Family Entrée -Turkey & Gravy. Served on rolls, it was as good as a hot turkey sandwich from the Diner! My boys loved it. And I was happy that dinner was served in minutes, especially after the day I had!

I always have a bag of Banquet Chicken Nuggets in the freezer – after all they are a standard in any household with toddlers or preschoolers. I also keep at least one box of Banquet Skinless Fried Chicken on hand. Gasp! – fried chicken from the freezer? Yes! It’s seriously just as good as my Mom’s!

Tuesday's Tip: Use Recurring Dates As Triggers

I mentioned in my March To-Do List that daylight savings is when we should change the batteries in our smoke detectors. Using this recurring event triggers a reminder to me to a chore or task that I might not think of. These are seasonal or annual tasks that need to get done.

I have several dates that remind me to do something:

  • Our Anniversary – review our life and home-owners insurance policies and our will.
  • My Birthday – make an appointments with all my doctors for annual visits (OB/GYN, dentist, eye doctor).
  • First Day of Spring
    • inspect air conditioners and prep for use
    • schedule pest inspection and service.
  • First Day of Fall
  • Semi-Annual Church Rummage Sale – declutter, purge and donate

Each month, I check the calendar and make time for the annual or seasonal chores based on my trigger.

WOW – I can’t believe it’s March already. One of my favorite months – my Birthday and St. Patrick’s Day are this month!

Let’s start this month right with some proper planning. Grab your calendar, a note pad and a pencil and let’s get to it!

Check birthdays for the month and make note to buy presents and/or cards. (Mine’s on the 15th, a free ecard will be nice – LOL)

March is National Nutrition Month. Try to evaluate the meals you make for your family and start making modifications for a healthier meal plan!

The Home Depot Kids Workshop is Saturday, March 6 – this week they’ll make a birdhouse rain gauge.

March 9th is Organize Your Home Office Day. I personally have big plans for this day. Because of a lot of changes here in the house, I need new office space. So this month’s project is just that – a new office space for me! Stay tuned – I’ll share pictures.

Daylight Savings Time Begins March 14 – set your clocks an hour ahead. And it’s time to change the batteries in your smoke detectors, carbon-monoxide detectors and flashlights. Need batteries? Add them to your shopping list!

St. Patrick’s Day is just 2 weeks away! Are you celebrating? What are you cooking? Even if you’re not Irish, a festive dinner is lots of fun (especially the beer). Did you know it’s super easy to cook corned beef in a slow cooker? Here are some more free recipes for you from my pal Christine, “The Menu Mom”.

March 20th is the first day of Spring! If you are going to have a garden, it is time to start planning what you want to plant and create your shopping list of supplies you will need.

March 25th is National Let Go Of Stuff Day – mark your calendar and join me for a day of purging!

National Cleaning Week starts march 28th. Stay tuned – I’ve got something planned!

Easter is right around the corner – April 4th. Start thinking about your plans for the holiday. Do you have the kid’s Easter outfits? Are you cooking?

Last week my meal plan got a little messed-up. Why did I plan to make dinner on Friday when it was our 10th anniversary? We had reservations! DUH!

Anyway, this week’s plan is very similar to last weeks:

Breakfasts:

Saturday: Broiled Citrus Salmon
