Meatballs



This past weekend we shopped at BJs Wholesale Store. We purchased 6 pounds of ground beef for just 99 cents per pound. That’s a lot of beef for a family of 3 – so it became meatball day! Periodically we do meatball day because it is a project: the mixing, the shaping, the frying, the baking – and then the cleaning. So we used 3 pounds to make meatballs (the remaining 3 was split, packed and frozen for future meals).

Hubby is the meatball maker since, as he says, he’s the Italian. (I’m Irish so he thinks I’ll put potatoes in the meatballs – LOL). He doesn’t have a written down recipe – he just makes them like his Mom did when he was little: bacon, onion, garlic, bread crumbs, eggs and meat.

I helped: I made fresh bread crumbs. Since we shopped Saturday and decided Sunday would be meatball day, I left a bag of bread open overnight to get stale. Then I just used my food processor to crumb it, adding oregano, parsley and some Parmesan cheese as it mixed.

Any-hoo, Little Dude helped this time. It was messy, but lots of fun!

Of course, dinner Sunday night was spaghetti and meat balls.

At the end of the day, we had 7 bags of meat balls in the freezer, divided into meal-sized portions. That should cover us through the rest of the year.

  1. Andrew and I love meatballs. I’ll have to live with it not being a “recipe” but I’m good at guesstimating and practicing. Love the tips for homemade bread crumbs. Darn, this makes the canned spaghetti sauce we had for dinner seem to be missing something. LOL

    And that’s a freaking awesome deal on hamburger!!! Can you buy some and send it to me? LOL

    My two boys and I LOVE to make meatballs together. It’s a family favorite in our household. I think we follow the same recipe as your husband. We jsut get the meat, bread crumbs, oregano, basil, black pepper and garlic, and then roll them up. We love lots and lots of oregano and basil. I’ve never though about using bacon or eggs. I may have to try that the next time we make it.
