Desserts on the Go

I love dessert. It’s my (and many others) favorite part of any meal. Desserts can be versatile so for those times when you have to run after dinner, be sure to carry your dessert with you so you don’t miss out.  After all, you didn’t clean your plate for nothing right?  That being said, dessert doesn’t necessarily have to be eaten only after dinner. In the summertime, it is nice to have something refreshing and sweet after lunch or as a mid-afternoon snack. We’ll look at both options here.

When I was growing up, there was a woman who sold snow cones for fifty cents. You could get all flavors. We would rush over in the summer and get one and savor it as long as we could. Use that same idea to create your own at home snow cones for the kids.

Using eight ounce plastic or paper cups (or ice cube trays if you prefer), fill the cup half full with a fruit smoothie, Kool-Aid, or 100 percent fruit juice. You can do this one of two ways. Stick a Popsicle stick in the center of the cup once the contents start to freeze. When the liquid is frozen solid, cut the cup away for a frozen pop. Alternatively, you can cut off the top of the cup and eat your treat like shaved ice. Both are refreshing desserts on a warm evening or hot afternoon.

Our next dessert involves fruit and a grill.  Again, this is perfect for summer parties. Have you ever tried grilled fruit? It has a unique flavor that goes well with sorbet, ice cream, or alone. Create your own grilled fruit kabobs and heat them on the grill. Add them to the sweet treat of your choice or, if you’re in a hurry, eat them alone on the go.

Puddings can be eaten on the go too. Make the pudding at home using cold skim milk and chill for at least five minutes to let it set. Scoop the pudding into disposable dessert cups. Want to avoid using a spoon? Try a frozen half of banana. Kids will love scooping up pudding with a banana and taking an occasional bite. When you are done, throw the cups away for a quick and easy clean up.

For a more inventive touch to your pudding snack, use an orange as your cup. Cut off the top and scoop out the flesh and the seeds. You can also use a juicer to strain out the seeds and use the juice for your dessert as well. Fill the orange with pieces of pound cake and cover with a glaze made from juice and confectioner’s sugar. Or, make a bread pudding and glaze it with orange juice. Either way, the orange dessert cups will be a hit.
