Veggie Italiano

What You Need:

¼ C fat free margarine

2 egg whites

¾ tsp. baking powder

¼ tsp. salt

1 1/3 C flour

1 ½ C fat free sour cream

¼ C light cream cheese, soft

½ tsp. oregano

½ tsp. basil

½ C broccoli, chopped

½ C tomato, chopped

½ C red and green bell peppers

½ C carrots, shredded

½ C cauliflower, chopped

How to Make It:

Place the egg whites in a large mixing bowl.

Add the margarine, baking powder, salt and flour.

Mix well with hands to combine.

Spray a round pizza pan with a non stick cooking spray.

Preheat oven to 400 degrees.

Roll out the dough to fit the pizza pan.

Place on the pan and bake 10 minutes or until a golden brown.

Allow to cool before adding toppings.

Mix together the sour cream, cream cheese, oregano and basil.

Spread evenly on the cooled pizza crust.

Add the vegetables to the pizza being sure to spread them out to the edges.

Believe it or not kids really do like this pizza. If you have children who aren’t too fond of sour cream and cream cheese use a lite vegetable dip instead.
