Cranberry Stuffed Apples

What You Need:

 

1/3 C canned whole cranberry sauce
1/4 tsp. orange zest
1/8 tsp. nutmeg
3/4 C water
1/2 C orange juice
1/3 C sugar
2 Golden Delicious apples, peeled, cored and cut in half lengthwise

How to Make It:

 

Place the cranberry sauce in a mixing bowl.

Add the orange zest and nutmeg and stir to combine.

Place a saucepan over medium heat.

Pour the water and orange juice into the sauce pan.

Stir in the sugar.

Simmer for 4 minutes or until the sugar has completely dissolved being sure to stir often.

Hollow out just a little of the center of each apple half.

Place the apples in the orange juice mixture.

Cover the pan and cook on low heat for 20 minutes or until apples are fork tender.

Remove and drain well.

Fill each apple center with the cranberry sauce mixture.

 

Serves 4

 

This makes a great side dish to any chicken or turkey entrée.  Sprinkle the top with chopped pecan pieces for a special treat.
